Vendor Recipes: Pink Moon’s Kale Eggs
Ingredients:
Olive oil
Eggs
Kale (or other dark greens, such as chard or collard greens)
Onion chopped finely
Garlic diced
Salt & pepper to taste
Bread
Hot sauce (optional)
Heat olive oil in a cast-iron pan. 1 teaspoon per egg you plan on using. Once oil is hot, add onion and stir occasionally until onion is translucent. When onion is translucent, add your garlic and keep cooking until both are slightly browned.
Toast your bread. While your bread is toasting, crack your eggs into the pan over the garlic and onion.
While eggs are cooking, wash and chop your greens until they are shredded. When eggs are about halfway done cooking, top with your shredded greens.
Cook until your eggs are done and your greens are wilted. Remove from heat. Add salt and pepper to taste. Serve with toast and top with hot sauce.
