Fall Soup Series

As we transition out of the seasonal summer markets into fall, we are also transitioning into soup season! Soup is the holy grail of fall foods: warm and comforting, you can make a big batch and reheat it all week long. It can be hearty, it can be light, it can be veg heavy, it can be creamy and filling. Soups are also a great way to sneak some extra veg into your fall diets.  

Now that we’ve proven ourselves to be soup fans, here’s the deal: We want to share some of our favorite soup recipes with you so you can enjoy them along with us all season long! You can grab ingredients at the markets on the weekend and make them for the week ahead.  

Vegan Chicken Pot Pie Soup - Food With Liz

First up is this deliciously hearty Vegan Chicken Pot Pie soup from Food With Liz! You can find all of the mirepoix ingredients and potatoes at the farmers markets this weekend!

Italian-Style Polenta Soup With Kale and Parmesan

The second soup in our autumnal soup series is this Italian-Style Polenta Soup from Christopher Kimball! It’s a fairly quick and easy soup that comes together in about 30 minutes. The recipe calls for Tuscan kale, but you can swap out any hearty and dark leafy green for a similar taste.

Creamy Tomato Soup - Love & Lemons

We couldn’t get too far into our fall soup series without featuring a classic tomato soup. This creamy tomato soup recipe from Love & Lemons is the perfect soup to pair with an upgraded grilled cheese (think brie and thin slices of apples on homemade bread).



Vegetarian Peanut Soup - Cookie and Kate

This creamy vegetarian soup goes wonderfully over rice on a cold fall evening like today. Cookie & Kate’s Vegetarian Peanut Soup recipe is exactly the kind of recipe we look for as the days get shorter. It’s warm, hearty, creamy, and is deceptively easy to make!

Spiced Chickpea Stew with Coconut and Turmeric - Alison Roman

Today’s soup is the Spiced Chickpea Stew with Coconut and Turmeric by Alison Roman, made by our Executive Director, Jennifer! This recipe took the internet by storm back in 2019, probably for the following three reasons: 1. It’s delicious, 2. It’s accidentally vegan and gluten-free, and 3. It’s a super easy recipe!

Roasted Kabocha Squash Soup - Elise Bauer, Simply Recipes

Our next soup series recipe is extra special because the main ingredient is unique to our farmers markets! This roasted kabocha squash soup from Elise Bauer and Simply Recipes is a great excuse to get to the farmers markets this weekend. Kabocha squash is a Japanese winter squash variety that can be found at our farmers markets and a select few grocery stores. The resulting soup is hearty and creamy with some dimension from the ginger, cumin, and coriander.

Creamy Gnocchi Soup - Half Baked Harvest

This week’s soup is a hearty, creamy, deliciously filling choice to keep you warm on a cold night. This Creamy Gnocchi Soup with Rosemary Bacon from Half Baked Harvest is a deliciously rich meal that comes together pretty quickly. Despite the decadent sound of the soup, it actually contains up to 6 cups of kale! 

Sunday Beef Stew - Asha Gomez

This Sunday Beef Stew from Asha Gomez’s ‘My Two Souths’ is recommended by Magnolia Market Manager, Sarah. It’s the perfect warm and filling stew for a chilly autumn evening. The stew follows the cookbook’s theme of “Blending the Flavors of India into a Southern Kitchen,” and the results are absolutely delicious!

We would be remiss if we didn’t make today’s soup recipe something for you to use all of your leftovers for! This Next-Day Turkey Soup with Mashed Potato Polpetti is a great way to transform your Thanksgiving leftovers into something new that’s still delicious, hearty, and filling. The great thing about this recipe is that you can adapt and experiment based on the leftovers that you have. There are no rules!
