Chef Hend Yahya’s Strawberry Tomato Salsa

Prep Time: 10 minutes

Yield: 3 cups

 

Ingredients

1 cup tomatoes (seasonal variety), diced small

1 cup tomatoes (seasonal variety), whole *optional, see note in method

1 cup (½ pint) strawberries (seasonal variety)

1/2 small white onion, diced small

1/4 cup cilantro, roughly chopped

1-2 tablespoons jalapeño, minced (add as needed)

1 tablespoon extra virgin olive oil

1/2 lime juiced (1 tablespoon), plus more to taste

1 tablespoon kosher salt, plus more to taste

 

Method:

In a medium sized bowl, combine and mix  the diced tomatoes, strawberries, onions, cilantro, jalapeño, olive oil and salt. Amount of jalapeño can be adjusted to make more or less spicy.

*If no additional liquid is desired, the tomato blending can be skipped

 In a blender or food processor, blend the other cup of tomatoes until lightly chunky. Add as much tomato liquid to the salsa as desired. Add salt to taste and serve with chips, tacos, etc.
