Farmer Recipe: Dorcas’s Fava Bean Dip!

Farmer Dorcas Young of Lesedi Farm.

This variety of fava beans are easy to cook with and can be used in different forms, like curry lamb soup with fava and vegan bean curry, or this delicious Fava Bean Dip. Our fava beans are organically grown.

FAVA BEAN DIP

Ingredients

1 ½ cup fava beans

4 glove garlic

2 scallions, coarsely diced

2tbs cilantro, coarsely chopped

2tbs parsley coarsely, chopped

1/3 cup olive  oil

¼ cup lemon juice

1 ½ tsp cumin

1 tps sea salt

¼ tsp Black pepper, paprika

½ cup thai basil or African mint, (it is purple with more flavor)

Directions

Cooking the beans: Stove Top

Wash fava beans thoroughly and rise them. In a small pot, add 2 cups of fava beans and water.

Boil for 15 minutes and then simmer for 1 hour or more until beans are tender.

Cooking the beans: Pressure cooker

Wash fava beans thoroughly and rise them. Add beans and 2 cups of water and cook for 20 minutes. 

Drain beans and set aside.

In a food processor add cilantro, parsley, basil , mint, garlic, lemon juice, scallions, and onions.

Process and then add beans, olive oil and salt. Process until smooth, and add more oil or water until you reach your preferred consistency. Add salt, pepper, and paprika 

Serve with raw veggies or pita bread or add to sandwiches!
