January is National Soup Month

Soups can be so easy to make - and so delicious, healthy AND economical.  Make a big batch of soup and freeze it in mason jars, ready to re-heat when you need a quick meal.  A basic farmers market vegetable soup can start with some onion and/or garlic sauted in oil or butter - then just add water and a variety of chopped seasonal vegetables, and cook until tender. This method is simple and delicious, inspired by whatever is fresh and strikes your fancy at the market each week. From there, variations on this theme are nearly endless: add cream and/or broth; add herbs or spices; puree or leave it chunky; add legumes or animal protein....
