You loved the Fall Soup Series, so we’ve decided to bring you another recipe round-up for the next transitional season. Introducing: The Spring Salad Series. Salads are an ode to the light, delicate greens of spring. They make a delicious side that brings additional veggies to any meal, and with some extra thought (and a few extra ingredients) a salad can even be a full meal! They’re a great way to highlight the freshness of spring veggies!

Our Spring Salad Series would not be complete without a classic potato salad. As we are patiently waiting for more leafy greens to be in season, potato salad is the perfect way to tide us over. The mayo, Greek yogurt dressing gives the potatoes an elevated creaminess, and the radishes add that springy crispness to balance everything out. What a perfectly springy side dish!

Spring onions and asparagus are probably the springiest veg we can think of, so combining them in this light salad makes perfect sense. Jammy eggs add protein, and everything is complemented with a tangy dressing and creamy whipped feta (find some from Stella Maris), ricotta, or labneh (Glendale Shepherd has some amazing labneh that would be perfect for this).

Memorial Day weekend kicks off BBQ season, so today’s spring salad is one to wow at your next backyard get-together. This burrata salad screams summer, but you can already find tomatoes and burrata at the markets so there’s no reason not to make it a spring salad! This salad is like an elevated version of the classic caprese and will leave your guests in awe of the creaminess of the burrata contrasted with the freshness of the tomatoes. Yum!
